Pumpkin, potatoes and corn stew
Introduction
Halloween is right around the corner, and that means it’s time to start thinking about themed recipes! This pumpkin, potato and corn stew is the perfect dish for a Halloween party. It’s easy to do and will definitely get your guests talking.
The best part is that it can be made ahead, so you won’t have to worry about last minute preparations. Simply combine the ingredients in a pot, simmer for a few hours and then pour into bowls when your guests arrive. Add some Halloween decorations and voila! This stew is sure to please everyone, so give it a try this Halloween.

Ingredients
- 2.5 L chicken stock (no salt added)
- ½ cup lentil flower (can replace with regular flower)
- 2 large potatoes, diced
- 500g frozen sweet corn
- 1 medium onion, diced
- 3 large chicken breasts
- 1.5L of homemade pumpkin puree
- Salt (1 tbsp approx.) and pepper to taste
Steps
Step 1 :
Cook onions in a pan until they caramelize and are translucent
Step 2 :
Add onions to the slow cooker. Add potatoes, corn, and flour. Mix well until flour coats well the potatoes.
Step 3 :
Add the chicken stock, pumpkin puree, salt and pepper. Mix well so that nothing sticks to the bottom of the slow cooker (to prevent burning at the bottom. Add chicken and mix well again.
Step 4 :
Close lid on slow cooker, set to warm and let cook for 4-6 hours. Enjoy!
1 serving = 1.5 cups of stew.
